Mabel’s delicious soups

Anguilla – Mabel Gumbs, known to be the “Godmother of Saturday Soup”, runs a road side food stand in the central part of the Valley in Anguilla, across from the Anguilla National Trust Museum. She specializes in old school soul food, recipes that were passed on from her grand parents to her parents and to her. Soup that is not just delicious, but rich with love and dedication – made from local ingredients. Soups that are made with fresh seafood’s or corn – like her fish and corn soups and some of the best pigtail soup on the island. Mabel also prepares some decadent little condiments like the sweet potato pudding and mint sugar cakes that are so scarce to come by anymore.

But Mabel is much more than that – she is a story, a story of people making the best with what they had available to them. She loves what she does and has been selling her soups in Anguilla for at least the last 25 years.
